Not so long ago, you had to tiptoe through a sea of forgettable plonk to find good Cava stateside. As of late, the formerly forgettable plonk has become more and more memorable. Over the last decade, the quality of Cava we can find in Seattle is better than ever. I’m often tasting thoughtful, terroir-driven juice, sourced from sustainable estate vineyards, made in the champenoise method. The best examples come from organically grown vineyards in Penedes, and often represent a new take on Cava: dry, fresh, modern.
Dau Set is a Cava project created exclusively for one of our favorite Seattle-based importers, Vinea Imports, produced in Penedès by winemaker Joan Rabadà. A blend of the three classic Cava grapes Xarel-lo (40%), Macabeo (30%), and Parellada (30%), it is finished brut, which means dry. The aromatics move from orchard fruit and citrus pith to something downright tropical. I love the layers of creamy fruit intricacy. The palate is just as charming. The mousse itself—that’s the wine word for the bubbles—is downright joyful. It's a persistent stream of tight, round fizz. It’s dry, but not ultra dry, which comes through in textural elements on the palate. Bright and easy to love, ready to be paired with potato chips or abundant sunshine.

- Saturday is for pickups at our Sodo Production Kitchen (3810 Airport Way S, 98108) from 12pm-4pm.
- Tuesdays we deliver to West Seattle/Burien/White Center/Seatac and Bellevue/Kirkland/Redmond/Mercer Island.
